It is popular to blend it with Icelandic Skyr and other types of curd and cream cheese.
Birch syrup goes well as an ice cream topping and is good drizzled on bitter salads like rucola or it can be used in similar ways as maple syrup, in endless variations of food and drinks. It is good in tea and coffee, hot or iced, and it is excellent in soda water with lemon juice as well as in various cocktails.
